What can be more fun than some healthy junk food!!!
These cup cakes are my fav… not just because they are sweet but they are really healthy too…
1 cup wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
3/4 cup fresh curd ( it should not be sour )
1/2 cup sugar powder
1/4 cup olive oil
1/4 tsp cinnamon powder
1/ 2 cup grated carrot
1/2 tsp vanilla essence
pinch of salt
handful of walnut pieces
Mix flour, baking powder and baking soda .
Sieve it in bowl and keep it aside.
Mix curd, olive oil, cinnamon powder, vanilla essence, sugar and a pinch of salt in a different bowl.
(I usually put all these in a bowl and using a hand mixer blend them all well .)
Once this mixture is prepared add the sieved flour made above slowly and mix it well so that no lumps are there.
To this add grated carrot and walnut and give a quick mix.
Grease the cup cake tray with some olive oil and sprinkle some flour on it.
Fill the cup cake tray with batter.
Bake it for around 15 mins at 180 deg C.
Some handy tips:
Don’t forget to preheat your oven for 10-12 mins.
If you don’t have electric oven , you can still make this on Gas Oven (but the timing and temperature will vary )
Do perform toothpick test to check if the cake is baked properly.
Do not hurry to take if out. Let the cake be in oven for 10 mins at least after putting the oven off.
You can swap wheat flour with maida or combination of maida and wheat flour in your desired proportion.
Do enjoy this simple recipe with some hot coffee.
